HOT HONEY PINEAPPLE MOJITO

INGREDIENTS:

  • 2 oz white rum
  • 1 oz pineapple juice
  • 1/2 oz freshly squeezed lime juice
  • 1 tbsp Heatwave Hot Honey (plus extra for rim)
  • 8-10 fresh mint leaves
  • 2-3 pineapple chunks
  • Club soda, to top off
  • Crushed ice
  • Sugar for the rim
  • Pineapple slice and mint sprig, for garnish

INSTRUCTIONS:

  1. Prepare the Rim:

    • Pour a little Heatwave Hot Honey onto a small plate and some sugar onto another plate.
    • Dip the rim of your glass into the honey, followed by the sugar, coating evenly. Set aside.

  2. Muddle Ingredients:

    • In the prepared glass, add mint leaves, pineapple chunks, and 1 tbsp of Heatwave Hot Honey. Gently muddle to release the mint’s aroma and pineapple juice without tearing the mint leaves too much.

  3. Add Lime and Rum:

    • Pour in the lime juice and rum. Stir well to combine with the muddled ingredients.

  4. Add Ice and Pineapple Juice:

    • Fill the glass with crushed ice and add the pineapple juice, stirring gently.

  5. Top with Club Soda:

    • Top off the drink with club soda and give it a gentle stir.

  6. Garnish and Serve:

    • Garnish with a pineapple slice and a sprig of mint. Serve immediately.
